Ruby Chocolate Matcha Cookies

These are soft matcha cookies with the addition of ruby chocolate which make them the perfect combo of subtle earthy notes and fruity sweetness! Try them! 

Ingredients

1 1/3 cup (167 g) ap flour

2 tbsp corn starch

1 tbsp culinary grade matcha powder

1/2 tsp baking soda

1/2 tsp salt

1/2 cup melted unsalted butter

2/3 cup granulated sugar

1/2 cup light brown sugar

1 large egg - room temp

1 1/2 tsp vanilla extract or paste

1 cup roughly chopped ruby chocolate

Flaky sea salt

Instructions:

In a medium bowl whisk the dry ingredients.

In a large bowl add the melted butter, sugars, egg, and vanilla extract until smooth.

Gradually mix dry ingredients into wet ingredients until combined into a dough. Fold in chocolate.

Cover bowl with plastic wrap and place in the refrigerator to chill at least 30 minutes.
When ready to bake, preheat oven to 350°F and line a large baking sheet with parchment paper.

Use a small cookie scoop to scoop out dough onto tray. Place them at least 2” apart.

Bake for 10-12 minutes. The cookies may look like they are still not ready but they will continue to bake once you remove them from the oven.

tap the tray on your counter top to deflate cookies for a flat wrinkly look.

Top with flaky sea salt and enjoy! 🫶🏻
